Lyofast® MOT EF
 offers a broader strain selection in a single-sachet solution when compared to traditional RA-type cultures. The inclusion of additional Lactobacillus helveticus strains supports faster fermentation, improved galactose utilisation, and accelerated ripening through enhanced proteolytic activity, contributing to sweet, nutty and umami flavour notes.
Lactobacillus delbrueckii ssp. bulgaricus further enhances strain diversity and contributes to bacteriophage robustness within the culture blend.

Recommended Dosage
(suggested final cooking temperature: 41 - 48 ºC)
* 10 UC = 1 000 L Milk
* 25 UC = 2 500 L Milk
* 50 UC = 5 000 L Milk
