INTRODUCTION
Biofilms are the natural state of microorganisms in the environment, so it can be difficult to pinpoint the source of your biofilm and eliminate it once you have a problem.
While organisms can stem from biofilms on manufacturing equipment, biofilms that start on the farm can be found on bedding material or milking equipment.
It is important to note that biofilms are a threat to the food industry. Whether the organisms in the biofilm causes damage to your equipment, gas formation in your cheese, or accelerated acid development during cheesemaking, biofilms affect the quality of the product being produced and remain an issue of cleaning and sanitation practices.
