THE USE OF LIPASE ENZYME IN CHEESEMAKING

Introduction

Lipase enzyme is used to enhance flavour in cheese, especially in hard Italian cheeses but also where the manufacturing process doesn't allow cheese to ripen very long to develop flavour.  The activity of lipase is influenced by the composition of cheese as well as the aging conditions.
