Sodium Nitrite is a fast-acting curing agent commonly used in cured meats such as bacon, ham, sausages, and processed meat products. It works immediately to inhibit harmful bacteria like Clostridium botulinum, stabilise the characteristic cured meat colour, develop the desired flavour. Sodium Nitrate, on the other hand, acts as a slow-release source of nitrite. During extended curing or ripening, nitrate is gradually converted into nitrite by microbial activity. This makes Sodium Nitrate particularly stable for long-ripening products, such as dry-cured meats and semi-hard cheeses (e.g. Gouda and Edam), where ongoing protection against gas-forming bacteria like Clostridia is required over time.
