RECIPE GUIDELINES - GOUDA

Gouda is a ripened cheese which originates from Holland.  Inside the cheese is ivory coloured and has a smooth and springy texture with few holes, with a shiny golden rind.

CSL DOM 1 / 2 / 3 range
SACCO LYOFAST MOT range
SACCO LYOFAST LR 4 PD (Protective culture)
SACCO LYOFAST LH 13

Available in 5 UC | 10 UC | 25 UC | 50 UC sachets

Dosages:

5 UC enough for 500 L of milk
10 UC enough for 1 000 L of milk
25 UC enough for 2 500 L of milk
50 UC enough for 5 000 L of milk

CSL DOM range available in:
5 D sachets enough for 1 250 L of milk
15 D sachets enough for  3 750 L of milk
Add  LH 13 culture to the DOM culture to the milk mixture

Equal amounts of MOT and LR 4 PD culture (no LH culture necessary as MOT contains LH)

All SACCO cultures are direct inoculation, no need to dissolve the cultures, add directly to your milk mixture at the correct temperature
