RECIPE GUIDELINES - CRESCENZA

Crescenza is a typical Italian soft cheese characterised by a remarkable softness, smoothness and mild flavour. It is made of pasteurised whole milk and has a high moisture content, minor acid development, short ripening and a short shelf life.

SACCO LYOFAST LR 4 PD  (Protective culture)

Available in 5 UC | 10 UC | 50 UC sachets

Dosages:

5 UC is enough for 500 L of milk
10 UC is enough for 1 000 L of milk
50 UC is enough for 5 000 L of milk

All SACCO cultures are direct inoculation, no need to dissolve the culture, add to milk mixture at the correct temperature

Equal amounts of TS range and LR 4 PD culture is added to your milk mixture
