RECIPE FOR THE MANUFACTURING OF JAM OR PULP

Dynamiko sells the ingredients - Afristab DD 25, Pectin, Potassium Sorbate, Natamycin, Flavour compounds, aritificial sweetener (NNSB001) and citric acid.
The viscosity of the jam is adjusted according to your clients needs - this is done by adding more or less fruit pieces.
Fresh fruit can also be used - but very important to use the best quality always.
If a more spreadable product is desired then add less fruit pulp or pieces and increase the water content.
Very important to hot fill the product as much as possible and to turn the containers over during filling so that the heat is also applied to the lid of the container.
If using flavour and colour separately is going to be too difficult then purchase a flavour compound from Dynamiko that has both of these components in and use dosages between 0.1 and 0.3 %.
