However it is important to note that this method is a very expensive and a product specific ingredient and relevant to a specific process.

Encapsulated Baking Powder prevents the premature reaction with acids, for example the encapsulation material normally a lipid layer will melt in the oven activating the leavening acid when required. Encapsulation provides a more consistent leavening especially following freeze thaw abuse.

 

There are a dozen or so leavening acids for specific purposes. These can also be combined for specific needs ie. Craker BP, Crumpet BP etc.
