Nisin
is a natural bacteriocin used in a wide range of food products to extend shelf-life by inhibiting the growth of spoilage and pathogenic bacteria. It is particularly effective against Gram-positive bacteria and is widely accepted as a safe and reliable food preservative across global markets.
Important Clarification: Nisin is NOT effective against yeast ad moulds. Its primary function is bacterial control, while antimycotics such as natamycin are used for mould and yeast prevention.
What is Nisin?
Nisin is produced by fermentation using Lactococcus lactis (formally Streptococcus lactis). It is supplied as a light brown to milky white powder. Standardised on a sodium chloride (salt) carrier.
