Lyocarni is a range of starter and protective cultures “Made in Italy” for meat processing.
They ensure the safety and sensory quality of meat products.

Lyocarni cultures is developed specifically for the production of salami. The cultures assist in die curing process of the meat.

The cultures are available in 100 kg sachets - this is enough for 100 kg of raw meat. The culture is added directly to the raw meat (direct inoculation). 

Culture must be stored in the freezer at all times.

FPN is a mould culture for surface treatment of meat products. The culture contributes to an early visible, uniform, whitish coverage on the meat product, assists with the drying process and adds to the flavour.

Available in sachets enough for 100 kg of raw meat. Disperse the freeze-dried culture into 300 ml water, The culture suspension should be applied either by dipping or spaying it onto the meat product.

Shelf life: 12 months from date of manufacture

SACCO cultures are generally Kosher and Halaal certified
