Part of a good hygiene program is to swab the staffs hands at least once a month on a random basis so that you can ensure hygiene is always paid attention to.

Steriliser containers should be placed all over any production area to ensure staff are spraying their hands every 15 minutes.
Surfaces can also be swabbed and sent off to the nearest lab results on especially E.coli and coliforms.
