DFI PARMESAN CHEESE RECIPE
Parmesan is one of the most ancient and unique cheeses of all times. Known as the King of Cheese - Parmesan is an Italian hard, granular cheese produced from cows' milk and aged at least 12 months.
An ideal culture combination for Parmesan cheese would be LYOFAST YHL 092 / 096 E range ,with protective culture LYOFAST LR4PD, and if additional Lactobacillus helveticus is desired then this can be added in the form of LYOFAST LH 13. Lipase can also be added for an even stronger-tasting end product.
