DFI Analogue Cheddar Cheese Premix is a creamy, off-white cheddar-flavour powder blend developed for the manufacturing of analogue cheddar cheese products. The premix is designed to deliver consistent flavour, texture, meltability, and processing performance in a cost-effective cheese alternative application.

What is Analogue Cheese?
Analogue cheese is a cheese alternative manufactured using dairy and / or non-dairy ingredients to replicate the appearance, texture, flavour, and functionality of traditional cheese. It is widely used in processed food applications due to its consistent performance, improved cost efficiency, controlled melt characteristics, and extended shelf-life.

Shelf-life and Storage Conditions
* 12 months in unopened packaging.
* Store below 25 ºC in a cool, dry environment away from direct sunlight and odorous products. Reseal packaging securely after opening.

Mixing & Process Flow
Mix 25 kg premix + 17 kg vegetable fat + 29 kg good quality water according to the required formulation and process flow.
Step 1: Mix all ingredients and pre-hydrate for  minutes at a medium speed (1500rpm) in a high-speed Stephen-type cooker.
Step 2: Heat to 80 - 85 ºC and maintain for 1 minute.
Step 3: Add Annatto colouring if preferred - no Annatto will produce a white cheese.
Step 4: Adjust pH with citric acid to pH 5.7 - 5.9.
Step 5: Fill containers and store for at least 3 days at 4 ºC before distributing.
Final Yield = ± 70 - 71 kg of Analogue Cheddar Cheese
