CHEESE WAX IS A SPECIALISED COATING USED TO PRESERVE CHEESE BY PROTECTING IT FROM MOISTURE, AIR AND CONTAMINANTS. IT'S TYPICALLY APPLIED TO CHEESES LIKE CHEDDAR, GOUDA AND EDAM, WHICH BENEFIT FROM THIS ADDITIONAL LAYER OF PROTECTION.
KEY POINTS
PURPOSE
THE WAX HELPS TO KEEP THE CHEESE FROM DRYING OUT, DEVELOPING UNWANTED MOULD OR ABSORBING EXTERNAL FLAVOURS. IT ALSO HELPS TO PREVENT THE CHEESE FROM GETTING TOO SOFT OR LOSING ITS TEXTURE.
APPLICATION
THE WAX IS MELTED AND THEN APPLIED TO THE CHEESE, EITHER BY DIPPING OR BRUSHING. IT FORMS A SOLID, IMPERMEABLE BARRIER ONCE IT COOLS AND HARDENS.
TYPES
CHEESE WAX CAN COME IN DIFFERENT COLOURS (LIKE RED, YELLOW OR BLACK) WHICH IS MOSTLY FOR AESTHETIC REASONS. THE COLOUR DOESN'T AFFECT THE WAX'S PROTECTIVE PROPERTIES.
STORAGE
ONCE THE CHEESE IS COATED IN WAX, IT SHOULD BE STORED IN A COOL, DRY PLACE. PROPER STORAGE HELPS TO MAINTAIN THE QUALITY AND LONGEVITY OF THE CHEESE.
REMOVAL
WHEN YOU'RE READY TO EAT THE CHEESE, YOU'LL NEED TO REMOVE THE WAX BEFORE CONSUMING IT. THIS CAN BE DONE BY PEELING IT OFF OR CUTTING IT AWAY.
CHEESE WAX IS A VERY HANDY TOOL TO HAVE!
